Who's ready for a thick and creamyoatmeal smoothie bursting with sweet apricot and cinnamon spices?!?I'm gonna go out on a limb and bet you've never had an apricot smoothie before. I think when mostpeople have smoothies they automatically go for strawberry orblueberry flavors.
This includes me! I know, I know, it's hard to break those habits, but from time to time it's goodto mix things up with other fruits and flavors, and I have toadmitI'm kind of obsessed with apricotright now. So what better to do than to put them in a smoothie?
I foundfrozen apricots at Whole Foods a few weeks ago. Admittedly, it'snot a fruit I normally buy or eat so when I saw them, they immediately caught my attention. By the way, ifyou can't find apricotsfrozen you can alwaysuse a fresh apricot for the recipe, blend the ingredients together and freeze overnight.
The overnight part is optional as well, but highly recommended!Letting it sit overnightmakes the smoothie extra thick andcreamybecausethe gluten free oats, flaxseed and milk mingle overnight.By morning, it becomesa lusciously sweet apricot smoothie that'sperfect to wake up to and great to run out the door with. It's like having ice cream for breakfast!
An eating tip -> useaspoon or a thin straw to sip on it. That way you can savor the flavors forhours. There's something blissful about sipping onadeliciously sweet smoothie fora really long time.It's all about making the experience last longer. Seriously, it's life changing!

Ingredients
- 1/4 cup Gluten Free rolled oats
- 1/2 cup Greek yogurt
- 1 cup apricots
- 1 tablespoon flaxseed ground
- 1 teaspoon cinnamon
- 2-3 tablespoons almond milk unsweetened
- 1 handful ice
Instructions
Add all ingredients to a blender and blend on high until smoothie.
Transfer to a glass and enjoy!

Love the apricot-cinnamon combo! It's the perfect bridge between summer (smoothie!) and fall (warm spices!). And I agree -- eating a smoothie with a spoon just makes it seem like more of a "meal."

The way you describe this sounds so dreamy; I love that you put the apricots with oats in an overnight smoothie. Smoothies with oats are surprisingly the BEST kind of creamy, delicious, doughy smoothies.
