What is the difference between eggs Benedict and eggs Florentine?
Eggs Benedict is an open-faced sandwich using an English muffin that is topped with egg, bacon or ham, and hollandaise sauce. While Eggs Florentine is very similar, it replaces the bacon or ham with spinach.
Our recipe takes all the things we love about the classic recipe and puts a spin on it with the braided pastry. The first time we made Eggs Benedict Braid, our kids asked, “what is it?” However, now they request it regularly!

The best way to describe hollandaise sauce is to imagine tasting a rich and creamy butter with a hint of lemon flavor.

How to Make Eggs Benedict Breakfast Braid Recipe:
STEP ONE: First, make the Hollandaise Sauce by combining the first 5 ingredients and blend on high until combined. While you are blending, slowly add in the melted butter until combined and set aside.
STEP TWO: Next, melt the butter over medium-high heat. After that, whisk together five eggs, salt, and pepper, and place it in the skillet to cook until barely set before mixing in the Hollandaise sauce.
STEP THREE: Roll out the pastry into a 12×10-in rectangle and layer the bacon and egg mixture down the center of the rectangle. Sprinkle with chives.
STEP FOUR: Prepare the braid by cutting 1/2 -inch wide strips on each long side. Starting at one end, fold alternating strips at an angle across the filling and pinch ends to seal. Brush the egg wash over the braid.
STEPS FIVE AND SIX: Finally, bake at 375 degrees for 20-25 minutes. Let stand for 5 minutes before cutting and enjoying!

How long is this good for:
Serve: As with most recipes, you shouldn’t leave this benedict breakfast out for longer than 2 hours.
Store: Keep leftovers in an airtight container in the refrigerator for up to 3 days.
Freeze: Because of the nature of Hollandaise sauce, we do not recommend freezing this recipe.
How to get the kids involved with this recipe:
- Ages 2-3: Let them help pour in the ingredients to make the Hollandaise sauce. They can also help sprinkle the chives on top of the finished braid.
- Ages 4-5: Have them help spread out the mixture on the pastry and fold over the pastry stips creating the braid.
- Ages 6-8: Let them crack and mix the eggs before adding it to the rest of the ingredients. In addition, they can help mix the ingredients as well as help spread out the mixture on the pastry.
- Ages 9-11: Supervise them while they prepare the entire recipe. Remember to have them read it twice before beginning the recipe.
- Ages 12+: Let them prepare the entire recipe, unsupervised, while you do the happy dance in the corner!

Ingredients
HOLLANDAISE SAUCE:
- 3 large egg yolks
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- ¼ teaspoon Dijon mustard
- Dash cayenne pepper
- ½ cup unsalted butter melted
BRAID:
- 1 tablespoon unsalted butter
- 6 large eggs divided
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 sheet frozen puff pastry thawed
- 6 slices Canadian bacon
- 2 tablespoons fresh minced chives divided
- 1 teaspoon water

Instructions
MAKE HOLLANDAISE SAUCE:
In a blender, combine the first five Hollandaise sauce ingredients. Blend on high until combined. While blending, gradually add in the melted butter through the feed tube in a steady stream until combined. Set aside.
MAKE BRAID:
In a large skillet, melt butter over medium-high heat. Whisk five eggs, salt, and pepper; add to skillet. Cook and stir until barely set; stir in Hollandaise sauce.
On a lightly greased baking sheet, roll out the pastry into a 12×10-in. rectangle.
Layer the Canadian bacon and egg mixture down the center of the rectangle; sprinkle with 1 tablespoon chives.
On each long side, cut 1/2-in.-wide strips. Starting at one end, fold alternating strips at an angle across filling; pinch ends to seal.
Whisk remaining egg and water; brush over braid.
Bake at 375° for 20-25 minutes or until golden brown and eggs are completely set. Let stand for 5 minutes before cutting.
Sprinkle with remaining chives. Serve.
