Chili’s is one of my favorite restaurants. If I have to pick a place to go it’s always Chili’s mainly because I’m obsessed with their Skillet Queso Dip. So. Freaking. Good. I was playing around on Pinterest (what’s new??), when I came across a Chili’s Skillet Queso Dip copycat recipe, it took all I had not to immediately get in the car to pick up the ingredients. And I’ll be completely honest here. I did not win that battle. Within an hour I was on my way to the store to pick up the ingredients.
And o.m.g. this copy cat recipe was spot on, even with the change I made. YUM. The only thing I felt that was off was the color! But does the color really matter when the taste is so good? I think not!
Chili’s Skillet Queso
Ingredients
16 ounces Velveeta cheese 1 (15 ounce) can Hormel No Beans Chili 1 cup milk 2 teaspoons chili powder 2 teaspoons paprika 1 tablespoon lime juice 1/2 teaspoon ground cayenne pepper 1/2 teaspoon ground cumin
Directions
- Cut the Velveeta into cubes
- Combine the cheese with the remaining ingredients in a medium sauce pan over medium heat.
- Stir constantly until the cheese melts and all ingredients have been incorporated. Reduce heat to low and let simmer for 20 minutes.
- Serve with Tortilla Chips for dipping
- Enjoy!!

If there were a vegetarian version that substituted out the Velveeta for another cheese, I’d be right there. It does look tasty.

LMAO this is VERY true. If it’s not melted I won’t touch it but when I was little I used to like slices of it, just thinking about it makes me pukey now!

I love queso, and I eat at Chili’s often, but I don’t think I have ever had theirs. I will have to try this sometime! (And of course then have it at Chili’s to compare.)

I would not add as much milk. Kept adding more spices because milk made it to creamy and mild.

You mentioned that you made a change. What change did you make to the recipe? Skillet Queso is one of my favorites. I found a copycat of their honey mustard recipe and love it.

What if instead of Velveeta, make a Cheddar-Beer cheese dip and include the other ingredients listed? Can’t stand Velveeta.

I make this all the time but I just use the chili, velveeta, some minced jalapeño and some sliced green onion. You melt the cheese and add the chili and veggies and just heat thru. Simple and quick and soooo good!

Made this for a family gathering. It was a hit! Taste's just like Chili's. I bought Juanita's tortilla chips (Winco has them). They were a perfect companion!

I would like to know how many people this will serve.. I need to make enough to serve 10 people. is this a big enough batch or do I need to double it. Also can I cook this in a crock pot?

Darcy, it fed at least 20 people, but we had other appetizers as well. I made mine in the crockpot. It was easy-peasy!

I made this tonight for the Super Bowl. Loved it. I have made this before but never with the spices and I think that is what makes this soooo excellent. I added some leftover hamburger to mine as well and just cooked it in my baby crockpot. Thank you for posting this.

You can find it at any grocery store. I’ve seen it at Food Lion (south), Walmart and Target!

This is so so so great…I just got married a few months ago and my husband loves it!!! I have played withe ingreadiants and made it a little spicy and used chilli with beans its great no mater how u do it!!!
